So for some reason I was craving peanut butter. It’s been a while since I’ve craved this, so it was quite strange. So I went and made something extremely simple and healthy which included peanut butter.
This isn’t something I always have, because to me peanut butter doesn’t fall under my list of feel good food, which is a list of food that make me feel GOOD. I’m sure everyone has their own list and everything that doesn’t make the “Feel Good” food list is eaten sparingly.
I love how easy it is to make healthy vegan food, even though most people find it to be so bizarre and out of this world. As long as you keep it simple, you’ll have such an easy time with it. Plus most vegan treats aren’t even really unhealthy, I mean vegans can have ice cream (nice cream) for breakfast, lunch and dinner and not feel a single ounce of guilt because it’s filled with good stuff like potassium, vitamin C, fiber, and so on depending on what we put on it. I was too lazy to make myself some nice cream, so I just dumped everything into the jar. This is also a great way to show you how you don’t really even need a blender or anything to make a delicious treat!
I didn’t measure the ingredients for this but this is basically what was in this beautiful jar of deliciousness!
- Unsweetened Soy Milk
- Frozen Strawberries
- Sliced Latundan Bananas
- Chunky Peanut Butter
- Coconut Nectar from The Superfood Grocer
- VEGAN Dark Chocolate Chips
I placed the Frozen strawberries first with the soy milk so that they would soften, then added the chopped bananas, peanut butter, coconut nectar and chocolate chips. I would have added some granola but I haven’t made any in ages, so I just stuck with what I had available for me.
